The Cow Share Story:

A More Sustainable Way to Eat

Rediscover a more mindful approach to enjoying high-quality, locally sourced meat, rooted in tradition.

Picture yourself living in a small village a century ago. There are no supermarkets, no neatly packaged cuts of meat, and certainly no fast-food drive-throughs. Meat didn’t come in styrofoam trays; it came directly from the farm, and the process of obtaining it was a shared community experience.

Back then, families didn’t eat the same cut of beef every night. In fact, eating a scotch fillet every day would be unheard of! When a cow was slaughtered, the whole animal was used, and every part of it was appreciated. You’d get a mix of roasts, steaks, stews, and even the less popular but incredibly nutritious cuts like liver, bone marrow, and tallow. These weren’t seen as leftovers, but as valuable parts of the animal, rich in nutrients.

A typical family would split the cow into shares, maybe with their extended family or neighbors, and everyone would take home different cuts. You might be sharing some of the beef cheeks with your cousin down the road, or swapping a brisket for a few extra cuts of flank steak. The point wasn’t about picking your favorite cut — it was about making use of the whole animal and ensuring nothing went to waste. You ate seasonally, based on what the animal provided, and you built a relationship with your food and community.

This communal way of eating is how our ancestors ensured that food was more sustainable. Instead of buying the same cuts from the butcher every few days, they used everything, from the high-demand steaks to the less popular, but equally nutritious, parts. By eating the entire animal, they supported a sustainable food system and had a much deeper connection to their meals.

In today’s world, a cow share brings us back to that simpler, more responsible way of eating. By purchasing a share of a cow, you receive a variety of cuts, not just the usual favorites. It’s a much more sustainable approach than buying a specific cut every week, and it allows you to enjoy a greater variety of flavors and nutrients. It’s also a great opportunity to share with family and friends, just like those village days — giving your neighbor a portion of the short ribs in exchange for a bit of brisket, and creating bonds over good food.

A cow share isn’t just about getting your meat for the week. It’s about being part of a tradition that values the whole animal, sustains local farms, and brings us back to the way our grandparents (or great-grandparents) ate: with appreciation, respect, and a sense of community.
